Bang Bang Bang Chicken

AJR are an American pop rock band composed of multi-instrumentalist brothers Adam, Jack, and Ryan Met. They began street performing at Washington Square Park when Jack was only 8 years old in 2005. Because of street performing, they were able to buy musical equipment and release their first album. They self produce their music from their living room, titling their first album Living Room. The brothers are also ambassadors for Barack Obama‘s It’s On Us campaign, launched in 2014 with the aim of eliminating sexual assault in college campuses across the country.

Their most successful songs are “I’m Ready”, “Weak”, “100 Bad Days” and “Burn the House Down”. The name “AJR” comes from the first initials of the three brothers, Adam, Jack, and Ryan. Their musical style has been described as “electric,” combining elements of pop, doo-wop, electronic, and dubstep.

Ingredients

1 tbsp Vegetable Oil
2 Chicken Breasts (chopped into chunks)
2 Bell Peppers (sliced)
2 tbsp Peanut Butter
4 Garlic Bulbs (minced)
2 tbsp Dessicated Coconut
3 tbsp Soy Sauce
3 tbsp Sweet Chilli Sauce
2 tbsp Sesame Oil
200ml Coconut Milk
150g Rice Noodles
2 tsp Red Chilli Flakes
1 Lime
2 Spring Onions (chopped, to serve)

Step by Step Instructions

Step 1
In a small bowl, mix together the peanut butter, sweet chilli sauce, soy sauce and sesame oil to form a thick paste.
Step 2
Fry the oil and chicken in a wok for 5 minutes until browned. Add the sliced peppers and paste until all is covered.
Step 3
Cook for 2 minutes then add the coconut milk. Bring to a gentle boil and then reduce the heat to a simmer. Add the garlic and the desiccated coconut and cook for an extra 2 minutes until the chicken is cooked through.
Step 4
In a separate pan boil the noodles until cooked through then mix into the sauce. Add 2 tbsp of noodle water to the wok and mix to combine. Stir in the chilli flakes, squeeze some lime juice in and then serve with some chopped spring onions on top.
