Alex Smith, under the usernames Alsmiffy, Smiffy, and Smith, is a member of the Yogscast and a third of Hat Films. Hat Films is an English comedy and gaming YouTube channel comprising Ross Hornby, Alex Smith and Chris Trott. Since 2014, they have been part of The Yogscast network.

Whilst they are best known for creating several official Minecraft trailers, their gaming and vlog content makes up the majority of their channel, including games such as Grand Theft Auto, Minecraft and Rust. They are also film-makers and musicians, with their videos often including impromptu a cappella singing. They are also known for their music releases, such as their 2015 charity album Population: You, which peaked at #5 on the Billboard Comedy Albums chart.

Ingredients

1 Sourdough Bread Loaf
200g Brie Cheese (1 wheel)
2 tbsp Olive Oil
1 tbsp White Wine
4 cloves Garlic (minced, divided)
2 Bacon Strips (cooked and chopped)
Pepper
Chives (chopped)

This dish references Hat Films’ dilemma ‘Choose your own Adventure’ game: Wine or Cheese. Despite the game always ending in the players untimely and improbable death, this dish is a tasty accompaniment.

Step by Step Instructions

Step 1
Preheat the oven to 180°C. Cut off the top of the bread loaf so the top surface is flat and without crust. Tear the crusty top into bitesize pieces and set aside. Set the brie wheel on top of the bread and cut out a hole for the brie. Set the brie aside and remove the cut out bread.
Step 2
In a small bowl, mix the olive oil with 2 cloves of garlic and brush over the bread. Set the loaf aside. Carefully cut the top rind off of the brie wheel. Place the brie, cut-side up, inside the bread and set it on a baking sheet lined with parchment paper.
Step 3
Scoop out about a tablespoon of the center of the brie and pour the white wine into the divot. Top the brie with the remaining minced garlic and chopped bacon, and season with pepper. Arrange the bread pieces next to the bread on the baking sheet.
Step 4
Bake for 15-20 minutes, until the brie is completely melted. Sprinkle with chives. Dip the bread sticks and any other dipping items you’d like in the brie.
