A bulky Egyptian dish for Overwatch’s Ana. A vegetarian meal that utilises pasta, rice and lentils mixed with a tomato sauce and crispy onion garnish.

One of the founding members of Overwatch, Ana uses her skills and expertise to defend her home and the people she cares for.

As the Omnic Crisis inflicted a heavy toll on Egypt, the country’s depleted and undermanned security forces relied on elite snipers for support. Among them was Ana Amari, who was widely considered to be the world’s best. Her superior marksmanship, decision-making, and instincts made her a natural selection to join the Overwatch strike team that would end the war.

Following the success of Overwatch’s original mission, Ana served for many years as Strike Commander Morrison’s second-in-command. Despite her responsibilities in leading the organization, Ana refused to step away from combat operations. She remained on active duty well into her fifties, until she was believed to have been killed during a hostage rescue mission by the Talon operative known as Widowmaker.

In truth, Ana survived that encounter, despite being gravely wounded and losing her right eye. During her recovery, she wrestled with the weight of a life spent in combat, and she chose to stay out of the world’s growing conflicts. However, as time passed, she realised she could not sit on the sidelines while people threatened her city and the innocents around her.

Now, Ana has rejoined the fight to protect her country from the forces that would destabilise it, and most importantly, to keep her family and her closest allies safe.

The Hunchback of Notre Dame Salade Niçoise

Ingredients

For the Crispy Onion Topping:
1 Onion (sliced into rings)
Salt
100g Plain Flour
200ml Vegetable Oil

For Tomato Sauce:
1 tbsp Vegetable Oil
0.5 Red Onion (diced)
2 Garlic Cloves (minced)
1 tsp Coriander Leaf
1 tsp Crushed Red Pepper Flakes (optional)
400ml Passata
Salt
Pepper
1 tbsp White Vinegar

For Koshari:
100g Green Lentils
100g Brown Rice
100g Margheritine Pasta

0.5 tsp Coriander Leaf

For Ana’s dish, I wanted to create a meal that is commonly eaten in Egypt. I chose Koshari as I wanted to make it a meal that is quite bulky, given her army background, yet has some sweetness to it, for family values.

This meal is vegetarian however contains a lot of various carbohydrates. Mix and match the pasta, rice and lentils to suit your tastes. Perhaps throwing chickpeas into the mix.

The recipe requires deep fat frying. As I have gas hobs, I always use an electric hob for deep frying. Please do not use a gas hob for deep fat frying as it can easily cause a fire due to spitting and dripping oil.

Step by Step Instructions

Step 1

Make the crispy onion topping: Sprinkle the onion rings with salt, then toss them in the flour to coat. Shake off excess flour. In a saucepan, heat the oil over medium-high heat, cook the onion rings, stirring often, until they turn a nice caramelised brown. Onions must be crispy, but not burned (15-20 minutes).

Step 2

Make the Tomato Sauce: In a saucepan, heat the oil. Add the onion, cook on medium-high until the onion turns a translucent gold (do not brown). Now add the garlic, coriander, and red pepper flakes, if using, and sauté briefly until fragrant (30-45 seconds more). Stir in passata and pinch of salt. Bring to a simmer and cook until the sauce thickens (15 minutes or so). Stir in the white vinegar, and turn the heat to low. Cover and keep warm until ready to serve.

Step 3 

Make the Koshari: In a large saucepan, boil water. Add the lentils, pasta and rice and simmer for 15 minutes. Once cooked, drain. Given the green lentils, colouring from the lentils may have coloured the rice and pasta.

Step 4

Put it All Together! To serve, plate up the koshari. Top with the tomato sauce, and finally the crispy onions. Garnish with chopped coriander leaf.
