Doduo Steaks with Double-Headed Tomato Rostis

Doduo is a two-headed, bipedal avian Pokémon. Each head has a long sharp beak and two beady black eyes. It has a bristly, down-like covering of brown feathers on its body and both heads. Both heads have an identical brain. However, it is believed that on occasion they may possess different brains. It is also theorized that the two heads communicate with some form of telepathy for coordination. Even when sleeping or nourishing itself with food and water, one head is always awake and alert and keeps a keen eye out for enemies.

Due to its almost non-existent wings, it cannot fly very well. However, it has developed legs that make it a powerful runner. Reaching speeds of 60 mph, it energetically strides across the plains leaving large 4 inch deep foot prints behind it. By raising and lowering its two heads, it is better able to maintain balance while running. Doduo lives in wide open plains, grasslands, and savannahs.

Ingredients

2 Ostrich Steaks
2 Large Vine Tomatoes (halved)
2 Garlic Cloves (sliced)
1 tbsp Thyme (chopped)
1 tbsp Balsamic Vinegar
1 tbsp Olive Oil
2 portions Dauphinoise or Mashed Potatoes (to serve)
Rocket (to serve)
For the Jus:
1 tsp Olive Oil
1 Shallot (finely chopped)
50ml Port
50ml Red Wine
0.5 tsp Rosemary (chopped)
1 Bay Leaf
200ml Beef Stock
2 tbsp Butter
1 pinch Sugar

For Doduo I have two Tomato halves inspired by the amount of heads the Pokemon has, and an Ostrich steak as the centre piece. I found Ostrich steaks in my local supermarket. They were quite expensive but you get a taste that is similar to venison or veal. I think it’s a great alternative that people should try!

Step by Step Instructions

Step 1
Heat oven to 160°C. Put the tomatoes on a baking sheet with the garlic and thyme, drizzle over the balsamic vinegar and olive oil, Add some seasoning and roast for 30 minutes. Remove and set aside to cool.
Step 2
For the Jus, put the olive oil in a large frying pan over a medium heat and fry the shallots until golden and caramelised, about 10 mins. Add the port, wine and herbs and simmer for 10 mins, or until reduced by half.
Step 3
Pour in the stock and continue to cook until reduced by half again, then strain, discarding the shallots and herbs. Transfer the sauce back into the pan and bring to the boil. Remove from the heat and pan, add to a jug and whisk in the butter, then season to taste.
Step 4
Using the same pan as the now emptied sauce, add a little olive oil then once hot, add the ostrich steaks. Cook for 3-5 minutes on each side, applying a similar method as you would with beef steaks. Dish up the steaks alongside your tomatoes with the jus poured over. Serve with dauphinoise or mashed potatoes and a helping of rocket.
