The series focuses on a high school show choir, also known as a glee club, in the fictional William McKinley High School in Lima, Ohio. Will Schuester takes over the glee club after the former teacher Sandy Ryerson is fired for inappropriate contact with a male student. With a rag-tag group of misfit teenagers, Will attempts to restore the glee club to its former glory while tending to his developing feelings for his co-worker, guidance counsellor Emma Pillsbury, as well as defending the glee club’s existence from the conniving cheerleading coach Sue Sylvester. A major focus of the series is the students in the glee club: their relationships as couples, their love of singing and desire for popularity coming into conflict due to their membership in the low-status club, and the many vicissitudes of life in high school and as a teenager.

4 slices Bread
1 Avocado
1 Tomato
1 tbsp coriander (chopped)
0.5 Red Onion
Lemon Juice (splash)
200g Mozzarella (grated)
2 tsp Butter
Salt
Pepper
2 tsp Sweet Chilli Sauce

Given the title of the third episode of the second season of Glee, “Grilled Cheesus”, I thought a Grilled Cheese recipe would fit the bill! I decided to give it a splash of colour and added the Avocado Salsa on top to attach the vibrant personalities found within the show. It’s not a show known for its lack of colour and diversity.

Step by Step Instructions

Step 1

Preheat and oven to 160ºC and prepare a wire rack over a baking tray.

Step 2

Dice the avocado, tomato and red onion. Mix in a bowl with the coriander, salt, pepper and lemon juice.

Step 3 

Butter the bread and sprinkle over grated cheese. Put in the oven for 5 minutes or until the cheese is melted.

Step 4

Serve on plates with the guacamole salsa and some sweet chilli sauce.
