Hulk Green Curry

Robert Bruce Banner, M.D., Ph.D., is a renowned scientist and a founding member of the Avengers. As someone who was highly respected for his work regarding biochemistry, nuclear physics, and gamma radiation, he was commissioned by Thaddeus Ross to recreate the Super Soldier Serum which created Captain America, although Ross elected not to inform Banner what he was creating. However, when an exposure to high levels of gamma radiation instead of vita radiation went awry, the mild-mannered scientist had found that when angered, provoked or excited, he would transform into the huge, green, rage-fueled, nearly mindless creature known as Hulk.

Ingredients

Olive Oil
1 Onion (chopped)
150ml Chicken Stock
2 Chicken Breasts
150g Mangetout
50g Greek Yogurt
1 tbsp Coriander Leaf (chopped)
150g Rice

For the paste:
2 Lemongrass Stalks
2 Shallots (chopped)
1 tsp Coriander
2 Garlic Cloves (crushed)
1 tsp Ground Ginger
1 tsp Red Chilli Flakes
Lime Juice
1 tbsp Ground Coriander

For the Incredible Hulk, I wanted something powerful. It had to be green and I think the spiciness of this dish handles the anger of the Hulk well.

I have toned down the spices by adding extra Greek Yogurt because I can’t handle heat too well. This also has lightened the colour of it. For extra spiciness, add more spices and not as much yogurt.

I’ve based this meal off a Slimming World recipe. This recipe is low in fat making this meal tasty and healthy at the same time! Whilst I’ve included Olive Oil in the recipe, to keep it low fat, replace the oil with a low calorie cooking spray.

Step by Step Instructions

Step 1
Using a food processor, add all the ingredients for the curry paste and blitz until smooth then set aside. Meanwhile add oil to a frying pan and place over medium heat. Add the onion and gently fry for 5 minutes. Add a splash of water then add in the paste and stir to combine.
Step 2
Add the Chicken stock and bring to the boil. Once boiling, lower to a simmer and add in the chicken and cook for 8-10 minutes. In a separate saucepan bring water to a boil and cook your rice.
Step 3
Add your mangetout into the curry and cook for a further 10 minutes. Give it a stir and take off the heat once cooked.
Step 4
Stir in the coriander and yogurt. Once cooked, take your rice off the heat and drain through a sieve. Plate up the rice with the Curry and add a splash of lime over the top.
