Red Onion Lilies

Lily Potter was an English Muggle-born witch, the younger daughter of Mr and Mrs Evans, and the younger sister of Petunia. She learned of her magical nature as a child, after Severus Snape recognised her as such and told her of the existence of magic. Lily attended Hogwarts School of Witchcraft and Wizardry and was Sorted into Gryffindor House. She was a member of the Slug Club and in her seventh year was made Head Girl and began dating James Potter.

After Hogwarts, Lily married James. Along with their friends Sirius Black, Remus Lupin, and Peter Pettigrew, the couple joined the Order of the Phoenix during the First Wizarding War. She and her husband defied Lord Voldemort himself three times. Shortly afterwards, Lily and James had a son, Harry. However, the family was forced to go into hiding after a prophecy was made concerning Lord Voldemort and their infant son. She and James were betrayed by Pettigrew and thus both were murdered by Voldemort on Halloween night in 1981, while trying to protect their son.

Ingredients

4 Red onions (skin on)
4 tbsp Olive Oil (divided)
Salt & Pepper
Chopped Rosemary
Mustard Seeds
4 Bay Leaves

You’ll notice I served mine with some potato salad and some fried steaks, but these onions can go with a bunch of different meals or used as an appetiser before a main meal. Experiment with different herbs. I chose Rosemary to accompany the potato salad and mustard seeds for some extra tasty flavours throughout.

Step by Step Instructions

Step 1
Preheat oven to 180°C. Without cutting all the way down (leave about 0.5-1cm) cut the red onions into 8 wedges and keep upright.
Step 2
Organise on a small baking tray so they don't fall over and drizzle oil both between the gaps and across the outer layer.
Step 3
In between the wedges, sprinkle your salt and pepper. Add a bay leaf into each onion and add your herbs and mustard seeds too.
Step 4
Roast for 30-40 minutes. Around halfway through, rearrange the onions so your petals can spread out. Spoon some of the oil back into the onions again. Sprinkle some more salt and pepper towards the middle sections. Cook until the the outer layers are crispy.
