Moira’s Traditional Colcannon

Moira is a scientist from the world of Overwatch. Titled the Minister of Genetics, she has experimented with characters to help create strange and mysterious gave him super-human abilities, causing his cells to regenerate and decay at a hyper-accelerated rate.

Moira’s abilities grant her the power to steal life from her opponents and heal her allies. She can send orbs that can either deal damage or give health as they bounce around the maps. For a brief period of time she can disappear and reappear close by acting as a quick dodge or sudden retreat. Her ultimate ability summons a straight beam of healing and attacking energy that can spread across the remaining characters on the battlefield.

Ingredients

500g Potatoes (scrubbed and chopped into bite size chunks)
100g Butter
140g Back Bacon (finely chopped)
180g Kale (finely shredded)
150ml Double Cream
4 Eggs

I wanted to create a traditional Irish dish for Moira given her descent. There were a.few to choose from however I decided Colcannon was ultimately a classic staple meal from Ireland that I had to recreate. To add a bit more substance, I added some poached eggs on top which also helped with some juices flowing through the mash and kale.

If you wish to use this recipe as a side dish, remove the poached eggs and the dish would make a great accompaniment to a beef stew.

Step by Step Instructions

Step 1
Tip the Potatoes into a large saucepan of water and bring to the boil. Simmer for 20 minutes until they are tender when pierced. Drain potatoes in a colander.
Step 2
Meanwhile, heat a quarter of the butter in a large frying pan and add the bacon. Once cooked, add the kale and cook for 5 minutes. Turn off the heat.
Step 3
Boil a saucepan of water and add your eggs for poaching (I use Egg poaching cups that sit in the boiling water like boats, that I carefully drop in to poach the eggs). Once cooked remove from the water.
Step 4
Mash the potato until smooth. Heat the cream with the remaining butter until almost boiling the remove from heat and beat into the potato. Mix well with the bacon and kale. Serve with your poached eggs on top, and season if desired.
