Monsters Inc. is a great Pixar movie that is centred on two monsters, James “Sully” Sullivan and Mike Wazowski, who work at a energy production factory by scaring human children for their screams. The monster world believes that children are toxic and therefore when a human child enters their world, they must try to return her before it’s too late!
The light lunch recipe takes inspiration from Mike Wazowski himself. The little, one eyed, green monster was easy to recreate using a eggs and an avocado. Baking the two ingredients together with a side of smoked salmon gives a great healthy meal that is dairy-free, gluten-free, high in protein and a good source of vitamin B12 and Omega-3. It’s scary how this meal looks, tastes, and feels great!
Ingredients
1 Avocado
2 Eggs
1 tsp Chopped Dill
50g Smoked Salmon
Luckily this dish doesn’t need many ingredients to make. It requires little preparation and spends a small amount of time in the oven. To make this recipe vegetarian, and for some extra vitamin C, switch the smoked salmon for some grilled on-the-vine tomatoes.
The recipe will be easier with a muffin or cupcake tin. You’ll find that when you put the avocados in the oven with the eggs sat inside, they will need to be kept upright to hold the eggs in. A cupcake tin will help with this as the sides are small enough to not let the avocado rock in the oven. Alternatively, cut a thin slice away from the avocado skin on the base of the avocado so it sits on a flat surfaced baking tray.
If you’re serving this dish to vulnerable groups such as elderly people, babies, toddlers, pregnant women or people who are unwell, cook until the eggs are completely solid.

Preheat the oven to 220°C, 200°C fan or gas mark 7.Step 2
Halve the avocado, remove the stone and spoon out some of the flesh to make a bigger hole for the eggs.Step 3
Add the halves to your baking tray, hole side up and crack and egg into each half. Bake for 15 minutes until set.Step 4
Divide the smoked salmon between 2 plates. Put a baked avocado half on each plate and sprinkle dill over the food. Season with ground black pepper and serve.
