Fantastic Rolls and How to Make Them

Fantastic Beasts and Where to find them is a brilliant movie, introducing new magical creatures to the Wizarding World of Harry Potter.

Nifflers are mole-like creatures that are black in colour. They have a long snout and are particularly good at finding treasure.
Occamys are two legged winged snake-like creatures with beaks. They grow or shrink to the size of their container and produce silver eggs. They’re aggressive but are quite fond of insects.
The Thunderbird is similar to a large albatross, standing taller than a man when fully grown. They can have cloud and sun-like patterns on their wings. They sense danger and create storms as they fly across the sky.
A bowtrickle is a small twig-like creature that guards wand-wood trees.
And the Demiguise is an ape-like creature that can turn invisible when threatened.

I chose spring rolls for Newt Scamander because like his case of magical creatures, it holds a collection of ingredients whilst also being slightly translucent. You can see all the ingredients inside then taste them in a couple of mouthfuls!

Ingredients

16 spring roll wrappers
1 carrot (peeled and cut into matchbox slices)
1 red bell pepper (thinly sliced)
100g red cabbage (shredded)
1 bunch Spring Onions (finely chopped)
Fresh Coriander
100g Garlic and Ginger Paste
400g extra-firm tofu
2 tbsp sunflower oil
2 tbsp red curry paste
0.5 tsp garlic (ground)

You can add a variety of different vegetables to your spring rolls to adjust for your taste. The spring rolls can be served as party food or kept in the fridge to have at lunchtimes. To keep the rolls from sticking to each other, dip each wrapped roll in some sunflower oil.

Step by Step Instructions

Step 1
Drain the tofu and pat dry. Slice the tofu into matchstick sizes and spread the red curry paste across the tofu slices.
Step 2
Heat a frying pan with sunflower oil and fry the garlic. Place the tofu in the pan. Turn once each side is cooked and repeat until each tofu piece is done.
Step 3
Fill a bowl with warm water. Sprinkle some water over a cutting board so the spring roll wrappers do not stick to the surface. for each spring roll, quickly dip a wrapper into the water making the entire surface area is damp and place onto the cutting board. In a column in the middle of the wrapper, add a piece of tofu, red bell pepper, red cabbage, carrot slice, half a teaspoon of ginger garlic paste, a couple of spring onion slices and some coriander leaves.
Step 4
Folder the bottom of the spring roll wrapper towards the filling the fold over the sides like a burrito. Repeat until you run out of ingredients, then serve.
