Inspiration from

Pidove

Pidove is the Tiny Pigeon Pokémon. It looks like a cute pigeon and is probably less annoying than your common Pidgey and Spearow. I prefer Pidove to Pidgey because its evolution line is prettier than a scraggy bird. Pidove evolves into Tranquill, the Wild Pigeon Pokémon, before evolving into Unfezant, the Proud Pokémon. Given its name and physical qualities, it has similarities to Pheasants. Male and female Unfezant have different features, the female sports a basic brown hen look, whilst the male has green legs and a regal ribbons hanging from its head.

For Pidove, Tranquill and Unfezant I created a quick snack recipe for lunches and breakfasts that is both healthy and easy to make. Simply an egg baked in a grated sweet potato nest makes for a fun Easter recipe for all to enjoy!

The Hunchback of Notre Dame Salade Niçoise

Ingredients

  • 1 medium-sized Sweet Potato
  • 100g Parmesan Cheese (grated)
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • Salt and Pepper
  • 6 eggs
  • Parsley (garnish)

This recipe requires you to have a muffin or cupcake tray. You will need to mould the potato nests within the muffin slots so that you can crack an egg inside, and it will keep its shape. The last thing you want if to have everything ready and it collapses as you’re building it!

This dish can be served with some breakfast sides, or alongside another small dish. You could easily rustle up some grilled meaty or vegetarian sausages, tomatoes, and some baked beans for instance. I served these whilst I was making my recipe, Mike Wazowski Avocados inspired by Disney Pixar’s Monsters Inc, as I wanted to effectively use the muffin tray and finish up the eggs I needed to eat!

Step by Step Instructions

Step 1

Preheat your oven to 200ºC or 180ºC Fan. Grease a muffin or cupcake baking tray using some of the olive oil.

Step 2

Peel and grate your sweet potatoes. Combine with the parmesan cheese, olive oil, garlic powder, and a pinch of fresh salt and pepper.

Step 3

Portion the sweet potato mixture evenly into each of the 6 muffin sections. Press the mixture flat against the sides of the tray to form nests.

Step 4

Bake for 15 minutes in the oven until slightly crispy.

Step 5

Remove the tray from oven and crack an egg into each nest. Return the tray to the oven and bake for another 10-12 minutes for a soft yolk, or 15 minutes for a hard yolk.

Step 6

Once cooked, serve and garnish with some parsley. Serve with some optional sides.
