Riley’s Icelandic Salmon Soup

Sense8 (a play on the word sensate) is an American science fiction drama streaming television series created by Lana and Lilly Wachowski and J. Michael Straczynski for Netflix.

The show’s first season introduced a multinational ensemble cast, with Aml Ameen, Doona Bae, Jamie Clayton, Tina Desai, Tuppence Middleton, Max Riemelt, Miguel Ángel Silvestre, and Brian J. Smith portraying eight strangers from different parts of the world who suddenly discover that they are “sensates”: human beings who are mentally and emotionally linked. The show explores issues related to identity, sexuality, gender, and politics that its creators felt had been rarely addressed on television. Its central theme is an embrace of empathy across difference.

Ingredients

2 tbsp Butter
2 Baking Potatoes (diced)
2 Salmon fillets (chopped)
1 Carrot (diced)
1 Onion (diced)
150ml Double Cream
2 Egg Yolks (lightly beaten)
1 tbsp Parsley
1 tbsp Dill
1 Bay Leaf
500ml Water
Salt
Black Pepper

Sense8 includes a lot of characters from across the globe, however there is a large focus on Season 1 at Riley in Iceland and I wanted to bring an Icelandic dish online for people to eat across the world!

Step by Step Instructions

Step 1
In a large saucepan, heat the butter over medium-high heat and cook the onion until wilted and transparent, but not browned.
Step 2
Add in the potatoes, carrot. Pour in the water and bring to a simmer and add salt to taste. Simmer gently until the potatoes are tender. Add the salmon, herbs and double cream. Let this simmer 5 minutes.
Step 3
With a ladle in one hand and a whisk or fork in the other, slowly ladle some hot broth into the egg yolks, all the while whisking the egg yolks. You want to temper them so the yolks won't curdle in the soup. Whisk in another ladle, then one more.
Step 4
Pour this into the soup, stir well and turn the heat as low as it will go. Let this warm up a minute or three, then serve at once.
