Bo Peep’s Lamb Chimichurri
Ready In:35 mins
Toy Story is my favourite Pixar movie and I’m very much looking forward to the 4th instalment to the series. Whilst a lot of people were content with Toy Story 3 and felt it ended without needing more story, I disagree. I don’t disagree that it was a content ending, it was, I just believe that all the Toy Story movies, and Pixar movies in general, have ended without the aspiration of a sequel coming to finish the plot. Each movie has its own story and could be set before or after the previous without relying on the sequel to finish the story. Therefore, Toy Story 4 is very welcome and if you think it should end with the 3rd, don’t watch the 4th!
Toy Story 4 looks to reintroduce Bo Peep to the franchise after losing her for Toy Story 3. As a small role in both Toy Story and 2, it’s great she’ll be returning to be a major character in this instalment. It’s this reason I’ve used her as my inspiration and created a dish that ties to her character design.
4-8 Lamb Chops (serving 2-4 per person)
Mash Potato (to serve)
For the Chimichurri:
16 Mint Leaves
4 stalks Parsley (stalks removed)
100ml Red Wine Vinegar
100ml Olive oil
0.5 tsp Cumin (ground)
2 cloves Garlic (minced)
1.5 tbsp Lemon Juice
Depending on the size of you lamb pieces, decide how many portions you want per plate. Lamb is quite a fatty meat so fear free to cut off the fat before cooking. If you’re using chops, sear off the bones after cooking them or serve them with them attached. Whilst being a fatty meat (depending on the cut), this is a protein rich meal.
If you want to go carbohydrate-free, substitute the side dollop of mash potato for some seasonal vegetables. Removing the mash potato (depending on how you make it) would confirm this as a dairy-free meal too.
Step by Step Instructions
Step 1Season the lamb with salt and pepper.
Step 2Combine all the chimichurri ingredients except the olive oil in a food processor and blend for 10 seconds until chopped into a sauce. Stir in the olive oil by hand.
Step 3Heat a frying pan over medium-high heat and add some olive oil. When the oil is simmering, add the lamb to the pan. Cook each side until well browned, approx. 4 minutes each side.
Step 4Remove the lamb chops from the heat and serve with a dollop of chimichurri on top. Serve with mash potato.
