Tony’s Two Spaghetti Speciale
“This is the night, it’s a beautiful night and we call it Bella Notte.” Inspired by Lady and the Tramp, I’ve recreated Tony’s two spaghetti speciale, and it’s heavy on the meatballs too!
- 0.5 tsp Worcestershire Sauce
- 250 g Spaghetti
- 12 Beef Meatballs
- 200 ml Beef Stock
- 0.5 Onion diced
- 2 cloves Garlic minced
- 1 Red Bell Pepper
- 400 ml Chopped Tomatoes
- 1 tbsp Dried Herb Mixture
- 50 g Mozzarella
- Fresh Basil
- Parmesan optional
Boil water in a saucepan on the hob and then add some salt and your Worcestershire sauce. Once the water is boiling, add the spaghetti.
Fry some oil in another saucepan and add the onion and garlic for 5 minutes to soften them
Fry your meatballs for 10 minutes or until they are brown. Then add your bell peppers for a further 5 minutes until soft
Mix in your stock, tomato purée, chopped tomatoes and the herb mixture. Keep stirring until the mixture is boiling, then lower the heat to simmer.
Once cooked, drain your spaghetti. Plate up the spaghetti and add your meatballs and sauce after, making sure to distribute the meatballs equally.
Finally, add the torn up mozzarella and basil leaves on top. Slightly push the mozzarella into the sauce so that it melts into the mixture. Additionally you can sprinkle some parmesan on top, however this is optional.
