Kronk's Spinach Puffs

Everyone loves Kronk so I had to recreate his Spinach Puffs from Emperors New Groove and see what he was so passionate about!

Ingredients

  • 1 tbsp Vegetable Oil
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 250 g Spinach
  • 120 g Ricotta Cheese
  • 100 g Feta Cheese
  • 1 Egg yolk only
  • 0.5 tsp Salt
  • Puff Pastry ready made
  • Egg wash

Instructions

  • Preheat oven to 220ºC/Fan 200ºC/Gas Mark 6. Heat oil in a large pan before adding the diced onions. Cook for 5 minutes until translucent and soft. Add the garlic and spinach and cook for a further 5 minutes.
  • Place the spinach mixture into a medium bowl and stir in the cheese, egg yolk and salt.
  • Cut the puff pastry into roughly 8-10cm squares and place a tablespoon in the center of the square. Turn the square so it is a diamond shape, then brush egg wash along the bottom two sides like a V. Bring the two egg washed sides up over the filling to create a cone shape around the filling, pinching the pastry to clasp together.
  • Repeat for all the squares and then bake in the oven for 15 minutes.
