Fantastic Rolls and How to Make Them

- 16 Spring Roll Wrappers
- 1 Carrot peeled and sliced into matchsticks
- 1 Red Bell Pepper thinly sliced
- 100 g Red Cabbage shredded
- 1 bunch Spring Onions thinly sliced
- Fresh Coriander
- 100 g Garlic and Ginger Paste
- 400 g Extra Firm Tofu
- 2 tbsp Sunflower Oil
- 2 tbsp Red Curry Paste
- 0.5 tsp Garlic ground
Drain the tofu and pat dry. Slice the tofu into matchstick sizes and spread the red curry paste across the tofu slices.
Heat a frying pan with sunflower oil and fry the garlic. Place the tofu in the pan. Turn once each side is cooked and repeat until each tofu piece is done.
Fill a bowl with warm water. Sprinkle some water over a cutting board so the spring roll wrappers do not stick to the surface. for each spring roll, quickly dip a wrapper into the water making the entire surface area is damp and place onto the cutting board. In a column in the middle of the wrapper, add a piece of tofu, red bell pepper, red cabbage, carrot slice, half a teaspoon of ginger garlic paste, a couple of spring onion slices and some coriander leaves.
Folder the bottom of the spring roll wrapper towards the filling the fold over the sides like a burrito. Repeat until you run out of ingredients, then serve.
