Snake Bakmi Goreng

This Indonesian dish is inspired by the Maledictus cursed to transform into a snake, Nagini from the Harry Potter and Fantastic Beasts films.

Ingredients
  

  • 2 Edamame Noodles portions
  • 3 tbsp Olive Oil
  • 2 Eggs lightly whisked
  • 2 Chicken Breasts sliced
  • 1 Garlic Cloves minced
  • 200 g Kale
  • 4 Spring Onions sliced
  • 1 Celery Stalk thinly sliced
  • 100 ml Chicken Stock
  • 1 tbsp Gluten Free Soy Sauce

Instructions
 

  • Heat 1 tbsp oil in a large skillet over medium-high heat. Pour the whisked eggs into the pan and swirl to form a thin omelette. Cook for a minute until it is cooked on the bottom then carefully turn it over to cook over side. Once fully cooked remove from the pan, and slice into thin strips. Keep warm aside.
  • Cook the noodles according to package instructions then drain and rinse with cold water. Set aside.
  • Heat a wok over high heat. Add the remaining oil and swirl. Add chicken and garlic and stir-fry for 2 minutes. Add the kale, spring onions and celery and stir-fry for another minute. Finally stir in the stock and sauce sauce.
  • Add the noodles to the wok and stir-fry for 3 minutes or until thoroughly heated and noodles begin to lightly brown. Add the omelette pieces and toss gently. Serve in bowls.
