Molly’s Family of Roasted Carrots

Molly Weasley was an English pure-blood witch and matriarch of the Weasley family after marrying Arthur Weasley. Molly pampered her seven children as much as she could afford to, making up for the lack of funds for new books, brooms and robes by showering her loved ones with affection and providing them with abundant and delicious home-cooking and handmade gifts.

Molly was a member of the revived Order of the Phoenix following the return of Lord Voldemort and participated in the final battle of the Second Wizarding War. Her actions during this battle caused her to be known as the witch that defeated and killed the notorious Death Eater Bellatrix Lestrange. Molly survived the final battle to see her family expand even further, with twelve grandchildren by 2017. Percy and his wife named their eldest daughter in honour of her.

Ingredients

4-6 Carrots (mixed colours)
100g Butter
3 tbsp Honey
4 Garlic Cloves (minced)
Salt & Pepper
2 tbsp Parsley (chopped)

As Molly brings up a family of red-headed young wizards, I thought the best demonstration of her talents was to create a sweet side dish of roasted carrots to serve with a magnificent roast dinner.

Step by Step Instructions

Step 1
Preheat the oven to 200°C and lightly grease a baking tray. If the carrots are thick, slice lengthways by half or a quarter so each carrot stick is roughly the same.
Step 2
Melt butter in a pan over medium heat and then pour in the honey whilst stirring until thoroughly mixed. Add the garlic to the pan for 30 seconds.
Step 3
Add the carrots to the pan and allow the sauce to thicken over the carrots. Season with salt and pepper.
Step 4
Transfer the carrots to the baking tray on a single layer so they cook evenly and pour the remaining sauce over them. Roast for 20 minutes until the carrots are tender. Garnish with the parsley and serve.
