Pumpkin King Brain Pot

The Nightmare Before Christmas is a 1993 American stop-motion musical dark fantasy film produced and co-written by Tim Burton. Halloween Town, is a dream world filled with citizens such as deformed monsters, ghosts, ghouls, goblins, vampires, werewolves, and witches. Jack Skellington leads them in a frightful celebration every Halloween, but he has grown tired of the same routine year after year. Wandering in the forest outside the town center, he accidentally opens a portal to “Christmas Town.” Impressed by the feeling and style of Christmas, Jack presents his findings and his understanding of the festivities to the Halloween Town residents. They fail to grasp his meaning and compare everything he says to their idea of Halloween. He reluctantly decides to play along and announces that they will take over Christmas.

Ingredients

2 Pumpkins
2 tbsp Olive Oil
250g Wild Rice
1 Fennel Bulb
2 Apples
50ml Lemon Juice
1 tbsp Fennel Seeds
½ tsp Chili Flakes
2 Garlic Cloves (minced)
30g Walnuts (chopped)
2 tbsp Parsley (chopped)
3 tbsp Tahini
Pomegranate seeds (to serve)

As a fan of Jack Skellington, aka the Pumpkin King, I wanted to make a pumpkin dish that felt like eating the brains of Jack without making it meaty. Using pomegranate seeds helped make it look bloody and the wild rice helped create a dead design.

Step by Step Instructions

Step 1
Heat oven to 200°C. Cut the top off the pumpkins and use a metal spoon to scoop out the seeds. Get rid of any pithy bits also. Put the pumpkin on a baking tray, rub with 2 tbsp of the oil inside and out, and season well. Roast in the centre of the oven for 30-45 mins or until tender.
Step 2
Meanwhile, cook the wild rice following pack instructions. Thinly slice the fennel bulb and apple, then mix with half the lemon juice to stop them discolouring.
Step 3
Heat oil in a frying pan and fry the fennel seeds and chilli flakes, then, once the seeds begin to pop, stir in the garlic and the fennel slices. Cook for 5 mins until softened, then mix through the apple and walnuts. Remove from the heat and then add the cooked rice, tahini and parsley.
Step 4
Pack the mixture into the cooked pumpkins and return to the oven for 10-15 mins until everything is piping hot. Serve the pumpkin and top with pomegranate seeds.
