EVE over Abandoned Earth Hash
Perfectly formed poached eggs over a hash of random vegetables resembles the scene of EVE flying over Earth in the movie, Wall-E
- 2 Sweet Potatoes peeled and chopped
- 2 tsp Olive Oil
- 6-8 Shallots chopped
- 300 g Brussels Sprouts halved
- 4 Eggs
- 1 tsp Ground Nutmeg
Put the sweet potato in a bowl, cover with cling film then microwave on high for 5 minutes until tender. Uncover and leave to cool a little.
Heat the oil in a frying pan and add the onions. Cook for 5-8 minutes until starting to caramelise. Add the sprouts and stir-fry over a high heat until softened.
Push the sprouts and onions to one side and add the sweet potatoes. Squash them against the pan to mash them slightly while they cook. Leave undisturbed for 5 minutes until starting to crisp. Season, add the nutmeg and then stir. Cook for 5 minutes more until crispy.
Meanwhile poach the eggs in a pan of boiling water. Once cooked, serve the hash on plates with the eggs sitting on top.
