  • 2 Sweet Potatoes peeled and chopped
  • 2 tsp Olive Oil
  • 6-8 Shallots chopped
  • 300 g Brussels Sprouts halved
  • 4 Eggs
  • 1 tsp Ground Nutmeg


  • Put the sweet potato in a bowl, cover with cling film then microwave on high for 5 minutes until tender. Uncover and leave to cool a little.
  • Heat the oil in a frying pan and add the onions. Cook for 5-8 minutes until starting to caramelise. Add the sprouts and stir-fry over a high heat until softened.
  • Push the sprouts and onions to one side and add the sweet potatoes. Squash them against the pan to mash them slightly while they cook. Leave undisturbed for 5 minutes until starting to crisp. Season, add the nutmeg and then stir. Cook for 5 minutes more until crispy.
  • Meanwhile poach the eggs in a pan of boiling water. Once cooked, serve the hash on plates with the eggs sitting on top.
