Hulk Green Curry

Ingredients
  

  • Olive Oil
  • 1 Onion chopped
  • 150 ml Chicken Stock
  • 2 Chicken Breasts
  • 150 g Mangetout
  • 50 g Greek Yogurt
  • 1 tbsp Coriander Leaf chopped
  • 150 g Rice

For the paste:

  • 2 Lemongrass Stalks
  • 2 Shallots chopped
  • 1 tsp Coriander
  • 2 Garlic Cloves crushed
  • 1 tsp Ground Ginger
  • 1 tsp Red Chilli Flakes
  • Lime Juice
  • 1 tbsp Ground Coriander

Instructions
 

  • Using a food processor, add all the ingredients for the curry paste and blitz until smooth then set aside. Meanwhile add oil to a frying pan and place over medium heat. Add the onion and gently fry for 5 minutes. Add a splash of water then add in the paste and stir to combine.
  • Add the Chicken stock and bring to the boil. Once boiling, lower to a simmer and add in the chicken and cook for 8-10 minutes. In a separate saucepan bring water to a boil and cook your rice.
  • Add your mangetout into the curry and cook for a further 10 minutes. Give it a stir and take off the heat once cooked.
  • Stir in the coriander and yogurt. Once cooked, take your rice off the heat and drain through a sieve. Plate up the rice with the Curry and add a splash of lime over the top.
