George's Stupendous Stew
Reincarnating George's Marvellous Medicine would be dangerous to you or I, but this stupendous stew brings ingredients together to form a exciting edible dish!
- 1 tbsp Olive Oil
- 1 Onion diced
- 2 Garlic Cloves minced
- 2 Cod Fillets chopped
- 400 g Chopped Tomatoes
- 400 ml Coconut Milk
- 100 ml Double Cream
- 2 tbsp Tomato Puree
- 2 Bell Peppers sliced into rings
- 12 On-the-vine Cherry Tomatoes
- Salt & Pepper
- 1 tsp Red Pepper Flakes
- 1 tbsp Coriander chopped
In a large saucepan or wok, heat the olive oil until hot. Then add the onion and garlic and cook until fragrant.
Add the chopped tomatoes and stir. Once bubbling, add the coconut milk, double cream and tomato puree. Give it a stir and cook for 5 minutes.
Add the sliced pepper rings and cod and seasons with salt and pepper and the red pepper flakes. Cover and allow the fish to simmer for 12 minutes.
With 4 minutes remaining, place in the cherry tomatoes. Make sure the cod is fully immersed and turn the cod if some pieces aren't covered by sauce. When finished, serve with fresh coriander.
